Scalloped Corn

1 stick butter
1/2 cup sour cream
2 eggs
1 can 15 1/2 oz whole kernel corn, drain 1/2 liquid
1 can 15 1/2 oz cream style corn
1 box Jiffy corn mix
some chopped onion
Optional:
1 poblano pepper
some chopped pimento

Melt butter in a casserole dish, add sour cream, eggs. Mix. Stir in both cans of corn and muffin mix. Add veggies. Bake 350 for 45 to 60 minutes.

Christmas Chex Mix

In any combination to equal 40 cups
Rice chex, wheat chex, corn chex, spoon sized shredded wheat, mini triscuits, Cheerios,
peanuts, pretzels, mixed nuts tossed together in large bowl
Melt together 1 # butter, 1/2 cup Worcestershire sauce, 1 T Tobassco, 2 T seasoned salt,
1 T celery salt, 1 T onion salt, 1 T garlic salt. Pour over cereal, stir well to coat evenly.
Bake at 250 for 1 1/2 hours, toss every 15 minutes or so..
For smaller amount 6 cups cereal to 5 T butter, 1 T Worcestershire, 1 t celery and garlic salt.
I bake Chex Mix in my turkey roaster, both top and bottom.
Mix stir and toss it all in there! Cool in pan. Store in covered tin.

Nuts and Chocolate Munchie

6 cups walnuts
6 cups almonds
bake 250 1/2 hour
then add 6 cups pecans
bake additional 1/2 hour, stirring
taste to see if nuts are done.
Cool. Add large jar of cashews and chocolate covered raisins.
Toss together. Resist! Maybe a gift in glass jar with a ribbon.
First tried in Lakewood Shepherd kitchen October 20, 2009.

Non Mac & Cheese Eggs

2t Sugar
1c milk
7 eggs
1lb monterey jack, shredded
4oz cream cheese, cubed
1lb small curd cottage cheese
2/3c butter, melted
1t baking powder
1/2c flour

Beat eggs, milk, sugar together, then add all cheeses, melted butter. Mix well. Stir in flour and baking powder. Pour into a greased 9"x13" baking dish. (May be made the night before.) Bake 50 - 60 mins at 350.

Serves 8 - 12 people.

Fatty dip #1: Belinda's Aunt's Dip

This is actually a Galveston recipe from Kenny's family, but we've had it so many times for Lakewood holidays we now call it our own.

Chop:
4-6 green onions (Kenny says you can also use scallions... ;)
large handful of deli-sliced corned beef

Hand mix well in a large bowl:
1 packet cream cheese (easier to mix at room temp)
green onions and corned beef
dash of soy sauce

Shape into a ball (I usually spoon it onto a big sheet of plastic wrap, shape it into a ball inside the wrap, then remove the wrap and plop the ball on a plate)

Serve with crackers or cut up veggies
