Dad's basic biscuits

3 cups flour - all purpose, unbleached
2 teaspoons baking powder
1/8 t baking soda
salt "like you are salting the same amount of potatoes"
1/3 cup of oil - healthy kind
1 1/4 cup of liquid - some or most of it acidic (orange juice/ yogurt) to activate leavening
preheat oven to 450 degrees Fahrenheit

mix dry ingredients, then cut in oil until well blended, smaller than rice grains

add liquid slowly, using as little as possible, and manipulate dough as little as possible to minimize gluten formation, until all dry ingredients stay in a ball

turn out onto floured work surface, flour hands and press dough out until less than half inch thick, fold in half once and press a bit, not too much again

cut with random cup, glass, or pastry shaper, and bake on ceramic baking tray (best option) for 10 minutes, then check and continue baking until biscuits are golden brown on top edges

"Key Lime"

Key Lime-
This goes into baked pie crust.
largest sweetened condensed milk, 14 oz,
12 oz slightly thawed cool whip,
limeade 6oz plus to taste.
Whip together,
chill for three to four hours.

Kentucky Derby

Kentucky Derby
in unbaked pie crust,
2 eggs lightly beaten,
1 cup sugar,
4 T butter, melted,
1 teas. vanilla
1 cup chopped walnuts,
1 cup melted chocolate chips,
1/2 cup flour.
Combine well.
Spread into unbaked pie shell,
bake 350 for 30 to 40 minutes, until filling pulls away from the crust.
Garnish with whipped cream.
Give the cat another goldfish!

pie crust

Basic dough-
2 1/4 cups flour,
1/4teas salt,
12T. marg.
6to7 T icewater.
Cut marg into flour/salt to form pebbles,
add water to form a ball.
Roll in your hands.
Toss with flour, roll out.
Do not over do it.
