Dad's basic biscuits

3 cups flour - all purpose, unbleached
2 teaspoons baking powder
1/8 t baking soda
salt "like you are salting the same amount of potatoes"
1/3 cup of oil - healthy kind
1 1/4 cup of liquid - some or most of it acidic (orange juice/ yogurt) to activate leavening
preheat oven to 450 degrees Fahrenheit

mix dry ingredients, then cut in oil until well blended, smaller than rice grains

add liquid slowly, using as little as possible, and manipulate dough as little as possible to minimize gluten formation, until all dry ingredients stay in a ball

turn out onto floured work surface, flour hands and press dough out until less than half inch thick, fold in half once and press a bit, not too much again

cut with random cup, glass, or pastry shaper, and bake on ceramic baking tray (best option) for 10 minutes, then check and continue baking until biscuits are golden brown on top edges

Dad's Biscuits started in our family after Dad's Pancakes.
When Zac and Toby were little boys we had pancakes after marching around the house on Saturday mornings, waking everyone up.
As teenagers the boys were no longer interested in marching or waking up!
So Dad/ David started making biscuits which could be eaten when ever you were ready!
